What is "Riemannian" geometry and why is the geometry of space-time considered "Riemannian" and not Euclidean?

From what I understand, "Riemannian Geometry" is an integral part of Einstein's General Theory of Relativity. But what exactly is it? And why is the fabric of space time considered Riemannian by nature?
